I don’t normally eat meat on school nights preferring to save it for the weekend. But I had a couple of chicken breasts that needed using and there was a tin of chickpeas on the side so I decided to experiment. Also I had bought some fresh tumeric root from the funky “world veg” aisle in the newly refurbished Morrisons supermarket I was dying to use. Never actually had it before so this was a bit of a shot in the dark TBH.
I have to say I

Decided a bit of an experiment was in order with some Smoked Mackerel I had that needed using up. Would it be ok in a curry? I decided to fearlessly try basing my dish losely on a Goan Fish curry I made for some pals just before new year.

Fat holiday snap.
Ealier this year I visit the Doctor about (amongst other things, I am a massive hypochondriac) a vague feeling that I was starting to get a little fleshy. I had just seen some holiday snaps form when me and my brother went to see the olds in Portugal and frankly it was hard to pretend that I wasn’t well, frankly, a bloater. I am a vain, vain man who really likes few things

I had some fresh Tarragon left over from cooking (extremely nice) Haddock Provençal the other day and thus was seeking an appropriate nice use for it that fitted in with my low cholesterol diet.
The following is basically an amalgamation of about three or four different recipes and some suggestions off twitter. Should serve two.
This was awesome!
Ingredients
3 Chicken Breasts
3 Large cloves Garlic
Lemon Juice
Tarragon
1 Onion
Dijon Mustard
Reduced fat Crème Fraiche
Black Pepper
Cherry Tomatoes
Olive Oil
Tagliatelle
In a roasting dish liberally pour some olive

Been experimenting quite a lot in the kitchen of late due to my low cholesterol diet. If I am entirely honest the results have been decided mixed, but last night we had one in the “win” column and I thought I’d publish it here (as much so I don’t forget how I did it as thinking my readers might be interested!).
So I wanted something spicy, and Sugar Snap Peas were on offer in Morrisons and this is what I came up with.
Ingredients
300g Diced Chicken

I have not posted an recipes here at Lunchtime Legend since the end of Vegtember. But I recently discovered my Cholesterol levels were a bit high (and I also realised I was becoming a big fat pig!) so have embarked on a low cholesterol diet. Thinking differently about cooking always sparks my muse a little and therefore I am on one at the moment so regular readers might see a few of these.
In my RSS feed James Ramsden’s new post about a Mackerel, Oyster and Wasabi roll (and Jeez

One of the big reasons for doing Vegtember is to try and consume food in a more sustainable way. There are reasons why eating less meat helps in this. But one of the biggest environmental factors in respect of food is the “food miles”. How far the food has to travel to get to your store, or to your plate.
This is an issue for meat, and for vegetarian products. This is especially pronounced when food stuffs are perishable and need to be refrigerated as they are transported.
One of the best

It is starting to get cold again, and as always when cold my thoughts turn to soups and stews. I cant help thinking a stew might be pretty disappointing sans meat. But most soups I cook are Vegetarian anyhow, so I thought that soup was most definitely the way to go!
So I decided to go to the grocers and just to see what takes my fancy. They had a number of Butternut Squashes that looked ripe and lovely so I snapped them up. I like soup to be hearty, tasty,

Since mooting the suggestion of doing Vegtember, and explaining some of the reasons why, many people have spoken to me about meat replacement products. Specifically many people have extolled the virtues of Quorn chicken style pieces (other meat replacement products are available).
I have been told on many fronts that the chicken pieces are a perfectly adequate replacement for normal cheap chicken and great for stir-fries and curries etc, with the added advantage of being healthier, cheaper and easier than using chicken.
I must say I was dubious. Ages ago when cooking
