Mackerel and Potato Curry

Decided a bit of an experiment was in order with some Smoked Mackerel I had that needed using up. Would it be ok in a curry? I decided to fearlessly try basing my dish losely on a Goan Fish curry I made for some pals just before new year.

 

Mackerel and Potato Curry

 

Ingredients

1 Packet Smoked Mackerel

2 Onions roughly diced

2 Medium Sized Potatos

1 400ml Tin of Coconut Milk

150ml Passata

1 Golf Ball Grated Gineger

5-6 Cloves Garlic

Harissa Chicken with Spiced Cous Cous

 

Been experimenting quite a lot in the kitchen of late due to my low cholesterol diet. If I am entirely honest the results have been decided mixed, but last night we had one in the “win” column and I thought I’d publish it here (as much so I don’t forget how I did it as thinking my readers might be interested!).

So I wanted something spicy, and Sugar Snap Peas were on offer in Morrisons and this is what I came up with.

Warm mackerel, wild rice and roasted vegetable salad

The mackerel salad.

I have not posted an recipes here at Lunchtime Legend since the end of Vegtember. But I recently discovered my Cholesterol levels were a bit high (and I also realised I was becoming a big fat pig!) so have embarked on a low cholesterol diet. Thinking differently about cooking always sparks my muse a little and therefore I am on one at the moment so regular readers might see a few of these.

The Science of Tipping

I was in Wimbledon tonight and thus was eating out.

After a wonder up and down “The Broadway” decided to have a pizza, and went to the newish, and reasonably priced, one called “Casa Nostra”. Had a nice pizza with Artichokes, Ham and Olives on.

Was good, service was good, I enjoyed myself (well as much as one can when eating out alone, tends to be a bit odd). So there was no question I would leave a tip.

But when the bill came they had included a column for “optional service charge”.
